My seller has received a better offer and is now asking me for more money. What can I do?

This is called gazumping and is an inevitable bi-product of the great weakness of the English system of selling and buying property – namely that no binding commitment on the part of the seller exists until he has exchanged contracts which can be many weeks, even months, after the initial deal is struck.  Nothing much can be done:  either pay up or accept the risk of the losing the house – the seller might be bluffing – he or she will have to bear in mind that taking the better offer will restart the sale process and that takes time.  In any event, the new buyer might withdraw and the seller could end up losing both offers.
